Strawberry marzipan jam with vodka

Ingredients for 4 servings:

  • 1 kg strawberries, cleaned, sliced
  • 500 g gelling sugar (2:1)
  • 100 g marzipan paste, diced
  • 1 lemon(s), untreated, zest and juice
  • 1 tsp vanilla extract (bourbon vanilla)
  • 50 ml vodka

Working time approx. 20 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 26 minutes

Place the hulled and sliced ​​strawberries and sugar in a tall, heavy-bottomed saucepan and stir. Let stand for a while so the strawberries release plenty of juice. Add the lemon zest, juice, and vanilla extract along with 50 ml of vodka. Add the finely chopped marzipan. Heat the mixture until the mixture is hot. After about 2 minutes, continue stirring with a hand blender, blending thoroughly until no more marzipan pieces remain. Boil for about 4 minutes until bubbling. Pour into twist-off jars and let cool. Store in a dark place. You can use vanilla powder instead of vanilla extract, or omit the vanilla completely.
