Ingredients for 4 servings:
- 2 eggs
- 2 tbsp flour, heaped (50 g)
- 1 pinch of salt
- 1 tbsp sugar
- 50 ml milk, cold
- 2 firm bananas
- 1 tbsp butter
- 2 tbsp honey
- 3 tbsp oil for frying the pancakes
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Mix eggs, flour, salt, sugar, and milk to make pancake batter. Let stand for about 15 minutes to allow the flour to swell. Then heat a little oil in a non-stick pan and cook 4 thin pancakes one after the other from the batter. Cover and keep warm on a plate. Peel the bananas, halve them once with a knife, then slice each half banana lengthwise. Slowly fry the banana pieces in butter on both sides in a non-stick pan. Halve each pancake once. Place a piece of fried banana on each half pancake, drizzle with a little honey, and roll up. Place 2 half-filled banana pancakes per person on dessert plates and reheat briefly in the microwave if desired. Pour over any sauce you like, such as maple syrup or chocolate sauce, and serve immediately.
