Banana-orange-lime jam

Ingredients for 1 servings:

  • 500 g gelling sugar (2:1)
  • 1 lime(s), untreated
  • 400 g banana(s), ripe, peeled, weighed
  • 600 ml orange juice
  • 3 tbsp desiccated coconut, optional.

Working time approx. 20 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 24 minutes

Banana with a fruity, fresh note, yet not too sweet. Makes 4-5 glasses, depending on the size.

Grate the lime zest (you should get about 1 tablespoon of grated lime zest) and squeeze out the juice. Mash the bananas. Combine the lime juice, zest, and orange juice with the banana puree. Pour everything into a large saucepan and stir in the preserving sugar. Bring to a rolling boil while stirring continuously and continue to cook for about 4 minutes, stirring continuously. Skim off any foam that forms. If you prefer jam with a bit more bite, you can also stir in 2-3 tablespoons of desiccated coconut at this point. Pour the jam almost to the brim into prepared, hot-rinsed jars, seal them, and let them sit with the lid on for 5-10 minutes.
