Gruyère – Sablés

Ingredients for 6 servings:

  • 150 g butter
  • 1 tsp salt
  • 150 g cheese (Gruyère), recent, spicy
  • 50 ml water
  • 1 egg yolk
  • 1 pinch of baking powder
  • 250 g flour
  • possibly caraway

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes

Fine pastries for an aperitif

Mix the butter, salt, cheese, water, and egg yolk thoroughly. Mix the baking powder and flour and add to the dough. Combine with a spatula or dough scraper to form a dough. Do not knead. Form into rolls and chill for a few hours. Cut the rolls into 5-7 mm thick slices and place on a baking sheet lined with parchment paper. Bake in an oven preheated to 180°C for about 13 minutes (until they are light brown). Sprinkle with caraway seeds, if desired.
