Eva's dreamy curd semolina pancake

Ingredients for 6 servings:

  • 6 egg yolks
  • 60 g sugar
  • 7 tbsp semolina (wheat semolina)
  • 400 g quark (cottage cheese)
  • 1 lemon(s)
  • 2 packets of vanilla sugar
  • 3 tsp cornstarch
  • 375 ml sour cream
  • 5 egg whites
  • 60 g powdered sugar

Working time approx. 30 minutes; Total time approx. 30 minutes

Quark-semolina pancake

Whisk the egg yolks and sugar until frothy, then fold in the semolina, curd, lemon juice, and vanilla sugar. Whisk the starch and sour cream until smooth and fold into the egg yolk mixture. Chill briefly. Whisk the egg whites and sugar until stiff peaks form and fold into the egg yolk mixture. Line a baking sheet with baking paper and spread the mixture on top. Bake in the oven at 160-180 degrees Celsius for about 20 minutes. Roughly tear the mixture with a fork and sprinkle with powdered sugar to serve. It goes perfectly with plum compote or berry compote.
