Grilled zucchini skewers

Ingredients for 2 servings:

  • 1 m.-large zucchini
  • 200 g feta cheese
  • 2 tbsp olive oil
  • 1 tsp, dried oregano
  • salt and pepper
  • Paprika powder, sweet
  • Cayenne pepper
  • 8 cocktail tomatoes

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 36 minutes

Bring a pot of water to a boil and add a little salt. Wash the zucchini and remove the stems. Cut into 12 even slices, approximately 2-3 mm thick. Blanch in boiling salted water for about two to three minutes. Drain, rinse with cold water, drain well, and let cool slightly. Meanwhile, cut the feta cheese into 12 cubes. In a bowl, season the feta with olive oil and a little oregano, salt, pepper, paprika, and cayenne pepper, and stir gently. Roll each zucchini slice with a cube of feta cheese. Thread two skewers, alternating between a tomato and two zucchini rolls. Top with another tomato. Grill directly on the grill at high heat until the zucchini is lightly browned.
