A perfectly fried salmon fillet

Ingredients for 1 servings:

  • 300 g salmon fillet(s) with skin, fresh
  • 1 tsp sea salt
  • 1 tbsp, heaped clarified butter
  • 2 rosemary sprigs, fresh

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Ideally, heat the clarified butter in a cast iron pan. Rinse the salmon fillet under running water and pat dry with kitchen paper. Salt the flesh side down and place the salmon fillet, flesh side down, in the hot fat. Add the two rosemary sprigs to the fat. Cover the pan. Be careful not to burn the rosemary sprigs and remove them in time. After three minutes, turn the salmon fillet skin-side down, reduce the heat, and cook with the lid closed for another four minutes. Serving tip: Garnish with rosemary sprigs and serve with cheese tarts.
