Tomato sauce for pizza

Ingredients for 4 servings:

  • 3 m.-large tomato(s)
  • 1 m.-sized onion(s)
  • 2 tbsp tomato paste
  • 1 tbsp olive oil
  • 6 stalks of basil
  • 1 tsp oregano, dried
  • 1 tsp thyme, dried
  • 100 ml red wine, dry
  • 150 ml water or broth
  • some salt and pepper from the mill

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Wash the tomatoes and score the skin three times from the tip to the stem. Place them in a bowl and pour boiling water over them. After one minute, drain the water and peel off the skin with a paring knife. Cut the tomatoes into small pieces, removing all the seeds and the stem. Peel the onion and chop it into small cubes. Wash the basil, spin it dry, pick off the leaves, and roughly chop. Heat the olive oil in a pan and sauté the onion for two to three minutes. Add the tomato paste and fry briefly. Add the tomato pieces and deglaze with the red wine and water. Bring to a boil and season with oregano and thyme. Simmer for about 10 minutes over medium heat, stirring constantly. Stir in the basil and simmer for another five minutes. Season with salt and pepper.
