Ingredients for 6 servings:

  • 1 egg(s), hard-boiled
  • 1 onion(s), red
  • 1 tsp salt
  • 1 lemon(s), squeezed
  • 2 tbsp vinegar (red wine vinegar)
  • 100 ml olive oil
  • 4 tomatoes
  • ½ iceberg lettuce
  • 2 avocados
  • black pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For the sauce, peel and finely chop the egg. Peel and finely dice the onion. Mix together the egg, onion, salt, 4 tablespoons of lemon juice, and vinegar. Whisk in the oil. For the salad, slice the tomatoes and cut the iceberg lettuce into small pieces. Arrange on a salad plate with the tomato slices. Halve the avocados lengthwise, twist the halves together, open them up, and remove the pit. Then peel and cut into strips. Arrange on the salad, drizzle with lemon juice, pour over the salad dressing, and sprinkle with black pepper.
