Ingredients for 1 servings:

  • 1 can chickpeas
  • 100g bacon
  • 300 g couscous
  • 100 g feta cheese
  • 1 bunch arugula
  • 1 bunch of chives
  • 2 tomatoes
  • 1 red bell pepper(s)
  • 1 bell pepper(s), yellow
  • 4 tbsp red wine vinegar
  • 2 tbsp balsamic vinegar
  • salt and pepper
  • Water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Fry the bacon in a pan until crispy. Once cooled, chop it into small pieces. Pour a little boiling water over the couscous (couscous expands, so you don’t need to cook it). You need a little water, roughly a 3:1 ratio of couscous to water. Let the couscous swell and cool. Chop the peppers, tomatoes, feta, and chives and place them in a salad bowl with the chickpeas. Wash the arugula and add it. Add the cold couscous and bacon. Make a salad dressing with red wine vinegar and balsamic vinegar (I use crema). Season with salt and pepper. Children love this salad and can help with the preparation.
