Ingredients for 1 servings:

  • 4 cl milk
  • 8 cl olive oil
  • 3 cloves garlic
  • lemon juice
  • salt and pepper

Recipe from a Spanish chef

Blend the milk and olive oil in a container with an immersion blender for about 5 minutes until the mixture reaches the consistency of mayonnaise. Then add the finely chopped garlic cloves, lemon juice, salt, and pepper, and blend thoroughly again with an immersion blender. Tip: Use fresh milk, not UHT milk. To achieve the correct consistency, always use a 2:1 ratio of oil to milk.
