First things first: To make this, you’ll need a 20cm baking pan, two bowls, some foil, a whisk, and an electric mixer. First, crack the eggs and separate the yolks from the egg whites. In one bowl, beat the egg whites with an electric mixer until stiff peaks form. In another bowl, also using a mixer, beat the egg yolks well. Then, using a whisk, add the cream cheese and egg yolks, one spoonful at a time. Once the mixture is smooth, drizzle in the sweetened condensed milk and whisk to combine. Finally, add the egg whites and whisk to combine (using a whisk helps keep the mixture light and airy). Pour the mixture into the prepared baking pan. Place the baking pan with the batter in a similarly sized baking dish that is filled with about 1cm of water. Tip: To prevent water from running into the dish, pull the foil up about 3cm from the bottom of the baking pan, then pour in the batter and place the dish in the baking dish. Bake the cake in the oven at 180°C (top/bottom heat) for 45 minutes. Let the cake cool completely. Carefully remove it from the baking dish and serve on a cake plate.
