Ajvar – Garlic Noodles

Ingredients for 2 servings:

  • 500 g pasta, cooked and weighed
  • 1 onion(s)
  • 100 g cooked ham
  • 1 tbsp tomato paste
  • 3 cloves garlic
  • 200 g ajvar
  • 100 ml cream, maybe a little more
  • 1 shot of sherry
  • 50 g Parmesan, grated
  • 1 handful of fresh herbs (e.g. basil and parsley)
  • Salt
  • pepper
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and chop the onion, and sauté in a little oil until translucent. Add the diced ham and tomato paste and sauté everything for a few minutes. Deglaze with ajvar, crushed garlic, cream, and a good splash of sherry. Season with salt, pepper, and sugar. Simmer gently for about 5 minutes, then add the pasta and mix everything well. When the pasta is hot, add the Parmesan cheese and herbs and mix. Season again, then serve. This serves two people. All quantities can, of course, be adjusted to suit your taste.
