Baked pork fillet

Ingredients for 5 servings:

  • 1 pork fillet(s)
  • 1 beefsteak tomato(s)
  • 125 ml sweet cream
  • 1 large can of tomatoes, peeled
  • 250g mozzarella
  • 500 g cheese (Gouda)
  • 2 tbsp honey
  • 100 ml vegetable stock
  • 1 tsp sweet paprika powder
  • 1 tsp paprika powder, hot
  • 1 tsp herbs of the province
  • salt and pepper
  • 1 pack of penne

Cut the pork fillet into 2 cm thick slices. Sear in a pan (approx. 1-2 minutes per side) and season with salt and pepper. Set the meat aside. Add half of the liquid from the peeled tomatoes, vegetable stock, and cream to the pan and bring to a boil briefly. Season with honey and the remaining spices. In the meantime, thinly slice the peeled tomatoes, beefsteak tomato, and mozzarella. Grate the Gouda cheese. Then layer the ingredients in a baking dish (preferably a round dish). First, a layer of peeled tomatoes, then a layer of pork fillet. Place a slice of mozzarella on top of each pork fillet and cover with Gouda cheese. Repeat this process until all the ingredients are used up. For the last layer, use the sliced ​​beefsteak tomato instead of the peeled tomatoes. Finish with Gouda cheese. Finally, pour the sauce from the pan over the meat. Bake the casserole for 20 minutes in a preheated oven at 170°C. Meanwhile, cook the pasta according to the package instructions until al dente and serve.
