Ingredients for 4 servings:
- 500 g minced beef
- 3 large eggs
- 1 clove(s) garlic, crushed
- Parsley, flat-leaf, chopped
- Salt and pepper, oregano, nutmeg
- Cinnamon
- Flour, for rolling, safflower oil for frying
- 1 can of tomatoes, peeled
- Sugar, oregano, parsley, finely chopped
- olive oil

Mix the ground meat, ingredients, and spices (cinnamon adds a fantastically different flavor) well and let it sit for 30 minutes. Form small balls, roll in flour, and fry in hot oil. Remove any tomato stems, drain the tomatoes, and fry in olive oil. Add the tomato juice and season to taste. Briefly simmer the sauce with the albóndigas. It goes perfectly with rice, baguettes, and salad. Tip: Omit the flour and fry the balls in the oven. Turn them over once.
