Alex's vegan Galia melon ice cream

Ingredients for 4 servings:

  • 1 Galia melon
  • 1 can coconut milk, 250 ml
  • 1 tsp guar gum
  • 1 tsp locust bean gum
  • possibly agave syrup

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel the melon and cut into pieces, removing the seeds. Combine all ingredients in a tall container (1 liter capacity) and puree with a hand blender. If the melon isn’t too sweet, sweeten with agave syrup. Run in the ice cream maker for about 50-60 minutes. If the ice cream isn’t cold enough, chill in the freezer for another 2 to 3 hours.
