Ingredients for 4 servings:

  • 7 limes
  • 2 cups sugar
  • 1 cup(s) water
  • 7 basil leaves

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Mix the 2 cups of sugar with the cup of water. Mix the grated zest of about 4 limes into the water. Then squeeze all of the limes and add 3/4 of the lime juice to start with, tasting and adding more juice to taste. Crush the basil and add it to the water. Let it stand for about 5 minutes and then pour the water through a sieve into a bowl. The water will now have a light greenish color and should be placed in the freezer for about 25 minutes. Then whip the sorbet with a whisk and return it to the freezer for another 25 minutes. The sorbet should then be ready. Use a tablespoon to scoop out baby eggs and place them in bowls. DONE!
