Ingredients for 1 servings:
- 150 g flour
- 150 g breadcrumbs
- ½ pack of baking powder
- 450 g carrot(s), grated
- 100 g almonds, chopped
- 3 eggs
- 150 g sugar
- 150 ml oil
- 25 g butter
- 50 g cream cheese
- ½ tsp vanilla, ground
- 125 g powdered sugar
- 1 tbsp milk
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Preheat the oven to 180ºC. Grease a springform pan. Mix the flour, breadcrumbs, and baking powder and set aside. Mix in the carrots and nuts. Beat the sugar and eggs until creamy and gradually add the oil. Stir in the flour mixture in portions. Then stir in the carrots and nuts and pour into the pan. Bake in the preheated oven for a good 45 minutes. Let cool in the pan. For the frosting, beat the butter, cream cheese, milk, and vanilla until creamy. Gradually beat in the icing sugar until the mixture is smooth and spreadable. Brush the cake all over with it. Decorate with almonds or marzipan carrots, if desired.
