Allgäu Wild Garlic Donuts

- 100 g Wheat flour
- 250 g Rye flour
- 2 Eggs
- Salt
- 2 tablespoon Oil
- 400 g Wild garlic
- 1 Chopped onion
- 1 tbsp Butter
- 200 g Cream cheese or ricotta
- 4 tbsp Cream
- Salt / pepper / ger. nutmeg
- Mix the types of flour and use the eggs, a little water, salt and oil to make a smooth dough and let it rest for about 30 minutes. Sort the wild garlic, wash it and put it in a saucepan while still wet and let it collapse for a moment. Steam the onion in butter until translucent, dust with a little flour. Mix the cream cheese, wild garlic and onions, season with salt / pepper / nutmeg to taste. Roll out the dough approx. 2 mm thick, cut out circles of approx. 8-10 cm, cover with the filling and either close or cover with a second piece of dough. Press on the edges and simmer gently for about 5 minutes. Remove and fry in hot butter until golden brown. Serve with green salad.
