Almond-banana pancakes

Ingredients for 3 servings:

  • 2 eggs
  • 130 g ground almonds
  • 1 banana(s), ripe
  • 200 ml skimmed milk, approx.
  • 2 tbsp protein powder
  • 2 egg whites
  • 1 pinch of salt
  • 1 tsp cinnamon
  • Coconut oil or rapeseed oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Low-carb

Mix the eggs, almonds, protein powder, cinnamon, and salt with a hand mixer. Mash the ripe banana with a fork and mix it in. Gradually add the milk until the batter reaches the right consistency and is not too runny. Beat the two egg whites with a hand mixer until stiff peaks form and carefully fold into the batter. Heat a little coconut or rapeseed oil (butter works too) in a large pan and fry the batter in small batches over medium heat, turning once and removing. A raspberry or blueberry sauce goes wonderfully with this.
