Almond Cake ! without Flour!

The perfect almond cake ! without flour! recipe with a picture and simple step-by-step instructions.

  • 1 tbsp Butter
  • 200 g Ground almonds –more —
  • 6 Eggs, size M
  • 1 pinch Salt
  • 200 g Sugar
  • 2 teaspoon Grated lemon peel
  • 1 Msp Ground cinnamon
  • 2 teaspoon Baking powder
  • 100 ml Virgin olive oil
  • Powdered sugar as needed
  1. Grease a springform pan with the butter and sprinkle with 2 tablespoons of ground almonds. Separate the eggs, whip the egg whites and 1 pinch of salt until stiff. Add 100 grams of sugar while stirring and continue beating for 1 minute. Mix the egg yolks, 100 g sugar, lemon zest and cinnamon for at least 2 minutes until creamy. Mix the almonds (200gr.) And baking powder and stir alternately with the olive oil into the egg yolk mixture. Carefully fold in the egg whites.
  2. Put the dough in the springform pan and bake in the hot oven at 180 degrees (convection 160 degrees) on a grid in the lower third of the oven for 50 to 60 minutes. Then let cool down completely and remove from the mold. Then you can cut through it with jam, bottom once, (orange jam tastes best — unfortunately I didn’t have any), put the lid back on and either sprinkle with powdered sugar or, like me, spread a topping of lemon juice on it, or you can leave it on just as it comes out of the oven, just spread it with powdered sugar and eat orange compote, that’s the original NDR recipe. Then put it in the fridge, that’s how it tastes best! Enjoy your meal !
