Almond-coconut balls

Ingredients for 2 servings:

  • 150 g almonds, ground
  • 150 g desiccated coconut
  • 1 tbsp honey
  • 1 lemon(s)
  • ½ tsp vanilla flavor
  • 100 g ricotta or cream cheese, mascarpone etc.
  • 2 tbsp milk or cream, etc.
  • 1 tsp cocoa powder
  • 1 tsp sweetener of your choice (e.g. maple syrup, honey, sugar, etc.)
  • n. B. Herbs as a topping (e.g. mint, basil, etc.)
  • Cocoa powder for garnishing

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Mix the almonds and desiccated coconut together. Add the honey, lemon juice, and vanilla extract, mix well, and season to taste. Form the mixture into 4-6 balls. Place in the freezer for 2-3 minutes. During this time, combine the ricotta, milk (to thin), and cocoa. Sweeten to taste (e.g., with honey, maple syrup, sugar, etc.). If the mixture is too thick, thin it further with milk (or cream, etc.). Remove the balls from the freezer and arrange them with the cream. Garnish with cocoa powder and herbs for a topping.
