Almond Liqueur Cake

Ingredients for 12 servings:

  • 3 eggs, of which the egg white
  • 3 tbsp water, cold
  • 150 g sugar
  • 1 packet of vanilla sugar
  • 3 eggs, including the yolk
  • 80 g cornstarch
  • 80 g flour
  • 1 tsp baking powder
  • 100 g ground almonds
  • 75 g butter, melted, cooled
  • 150 g marzipan paste
  • 6 tbsp liqueur (almond liqueur)
  • 6 tbsp jam (orange jam)
  • 200 g semi-sweet chocolate coating

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Beat egg whites and water until stiff. Gradually add sugar and vanilla sugar. Fold in egg yolks and fold in the mixture of starch, flour, baking powder, and almonds. Finally, fold in the butter. Pour the mixture into a springform pan (26 cm diameter) and bake in a preheated oven at 180°C (160°C fan oven) for approx. 40-50 minutes. Allow the cake base to cool on a rack and cut into 3 layers. Mix together the marzipan mixture and almond liqueur. Spread two layers with orange marmalade and the marzipan liqueur mixture. Place all three layers together and glaze with the cake icing. The cake can be decorated with cut-out marzipan figures or dots of cream.
