Ingredients for 1 servings:
- 6 tbsp yogurt
- 3 eggs
- 1 lemon(s) or orange
- 3 tsp honey
- 1 tbsp baking powder
- 200 g ground almonds, alternatively almond flour
- 1 tbsp cinnamon powder
- tsp vanilla flavor
- powdered sugar
- some lemon juice
Instructions
Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour
for a 12-cup muffin tray
Mix the dry ingredients in a bowl. Stir the wet ingredients in a bowl. Then gradually stir the almond mixture into the yogurt mixture. Grate lemon or orange zest, if desired, and add it to the batter. Squeeze the fruit and stir in the juice. Divide the batter into the holes of a 12-hole muffin tin. Bake in a preheated oven at 170°C (convection oven) for about 15 minutes on the middle rack. Mix the lemon juice and powdered sugar to make a glaze and spread it on the cooled muffins. Decorate as desired.
