Almond Muffins with Mini Marshmallows on Top

The perfect almond muffins with mini marshmallows on top recipe with a picture and simple step-by-step instructions.

  • 200 g Flour
  • 80 g Ground almonds
  • 1 packet Baking powder
  • 0,25 tsp Salt
  • 120 g Sugar
  • 80 ml Vegetable oil
  • 2 Eggs
  • 200 g Buttermilk
  • 1 tbsp Marshmallows (mini)
  1. Preheat the oven to 180 degrees (convection: 160 degrees) and distribute the silicone molds in the hollows of the muffin tray.
  2. Mix the flour with the almonds, baking powder, salt and sugar. Mix the oil with the eggs and buttermilk. Using a wooden spoon, stir the flour mixture into the buttermilk mixture until everything is well mixed.
  3. Pour the dough into the silicone molds and bake in the oven for about 20 minutes. 5 minutes before the end of the baking time, distribute the mini marshmallows on the muffins. The small marshmallows melt during baking and form a light topping. Remove the muffins, cool a little Serve dusted with powdered sugar if necessary.
