Almond Muffins with Mini Marshmallows on Top
The perfect almond muffins with mini marshmallows on top recipe with a picture and simple step-by-step instructions.
- 200 g Flour
- 80 g Ground almonds
- 1 packet Baking powder
- 0,25 tsp Salt
- 120 g Sugar
- 80 ml Vegetable oil
- 2 Eggs
- 200 g Buttermilk
- 1 tbsp Marshmallows (mini)
- Preheat the oven to 180 degrees (convection: 160 degrees) and distribute the silicone molds in the hollows of the muffin tray.
- Mix the flour with the almonds, baking powder, salt and sugar. Mix the oil with the eggs and buttermilk. Using a wooden spoon, stir the flour mixture into the buttermilk mixture until everything is well mixed.
- Pour the dough into the silicone molds and bake in the oven for about 20 minutes. 5 minutes before the end of the baking time, distribute the mini marshmallows on the muffins. The small marshmallows melt during baking and form a light topping. Remove the muffins, cool a little Serve dusted with powdered sugar if necessary.
