Almonds Caramel

  • 300 g Sliced ​​almonds
  • 50 g Butter
  • 200 g Cream
  • 16 g Bourbon vanilla sugar
  • 200 g Sugar
  1. Put the sugar, vanilla sugar, butter and cream in a saucepan and bring to the boil on the stove while stirring, until the sugar is completely dissolved.
  2. Turn off the hotplate and stir in the sliced ​​almonds until they are all coated. Preheat the oven to 170 ° C hot air.
  3. Next, line a baking sheet with parchment paper and distribute the almond caramel evenly on it.
  4. Put the baking sheet in the oven and let it caramelize at approx. 170-180 ° C hot air for 10-15 minutes. Keep an eye on it !!! As soon as it is golden brown, take it out and cut immediately into the desired pieces, or press it on with a knife, if it is already in the desired shape. So that, once it’s cold, it can be broken into the desired pieces. It resulted in 112 pieces of approx. 3×3 cm.
