Alsatian sausage salad

Ingredients for 2 servings:

  • 400 g sausage (Lyoner), cut into fine strips
  • 1 spring onion(s)
  • 1 handful of gherkins
  • 1 handful of radishes
  • 1 tsp mustard
  • 50 g cheese (Emmental), grated
  • 6 tbsp Balsamic vinegar bianco
  • 3 tbsp oil (rapeseed oil or similar)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For the salad, first slice the cucumbers and spring onions into small pieces. Dice the radishes and mix everything together with the sausage and cheese. Make the dressing by mixing the balsamic vinegar, oil, and mustard. Season to taste with salt and pepper. Pour the dressing over the salad and let it sit in the refrigerator for about 30 minutes (the sausage salad should be served cooler than room temperature, but – of course – not frozen). The sausage salad is best served ready-arranged on plates with a few pickles and/or radishes. It goes best with fresh farmhouse bread.
