Alsatian-style apple pie

Ingredients for 1 servings:

  • 200 g flour
  • 50 g sugar
  • 1 pinch of salt
  • 1 egg yolk
  • 2 tbsp water
  • 100 g margarine
  • 40 g ground almonds
  • 800 g apples (Braeburn)
  • lemon juice
  • Margarine, melted, for spreading
  • 100 g sugar
  • 3 eggs
  • ⅛ liter cream
  • 1 vanilla pod(s), scraped pulp, alternatively vanilla sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 25 minutes

Make a dough from flour, sugar, salt, egg yolk, water, and margarine. Roll out and place in a springform pan with a rim. Now spread the almonds on the base. Peel the apples, quarter them, slice them lengthwise, and brush them with lemon juice. Cover the base tightly and spread with melted margarine. Bake in an oven preheated to 200°C (top and bottom heat) for 35 minutes. Beat the sugar, eggs, and vanilla seeds until frothy. Stir in the cream and pour over the cake. Bake for another 20 minutes. I have to bring this with me every time I visit someone.
