Ingredients for 4 servings:
- 400 g pasta (spiral pasta)
- 300 g peppers, pickled grilled (from the jar)
- 180 g feta cheese (roughly diced)
- 45 g walnuts, roasted and roughly chopped
- 500 g chicken (grilled chicken meat), roughly chopped
- Salt
- ½ bunch basil
- 45 ml red wine vinegar
- 3 garlic cloves
- 3 tsp mustard
- pepper
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the pasta according to the package instructions, drain, and rinse with cold water. Drain the peppers, reserving the oil and reserving about 8 tablespoons. Roughly chop the peppers and toss in a bowl with the chicken, feta, pasta, walnuts, and basil. Mix the reserved oil with the vinegar, mustard, and garlic to make a dressing. Add the dressing to the salad and mix. Let it sit for half an hour. Season with salt and pepper, if desired.
