Amaranth with coconut milk

Ingredients for 1 servings:

  • 50 g amaranth
  • 150 g water
  • 2 tbsp coconut milk
  • 2 tsp honey
  • 1 pinch of cinnamon powder

Instructions

Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Briefly boil the amaranth with water according to the package instructions, then simmer for 30 minutes and let it swell for another 10 minutes. Then transfer it to a bowl. Add the coconut milk, honey, and cinnamon and stir. The consistency should be smooth. If you prefer it sweeter, add more honey.
