Amarena cherries

Ingredients for 1 servings:

  • 300 g cherry(s), frozen
  • 250 g sugar
  • 100 ml Amaretto
  • 2 small bottles of vanilla flavoring
  • 1 small bottle(s) of bitter almond flavoring
  • ¼ lime(s), the juice
  • 100 g gelling sugar, 2:1

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 5 minutes; Total time approx. 12 hours 20 minutes

Thaw the cherries. Add the sugar, Amaretto, vanilla flavoring, and bitter almond oil and let stand overnight. Stir occasionally to dissolve the sugar. The next day, drain the cherries through a sieve and collect the juice. Add the lime juice (I roughly squeeze it with my hand) and bring to a boil. Then add the gelling sugar and simmer for about 5 minutes. Then add the cherries back in and immediately fill jars. Makes 2 jars of 230 ml each. I’ve tried several recipes, and this is the one that came out of them. We like them best this way.
