- 2 egg whites
- 100 g sugar
- 1 tsp bitter almond flavoring
- 100 g almond(s), peeled
- 100 g almond(s), unpeeled
- 100 g powdered sugar

Preheat the oven to 160°C. Beat the egg whites until stiff, then slowly add the sugar, whisking continuously. Add the bitter almond flavoring. Finely grind the almonds (shelled and unpeeled). Mix thoroughly with the powdered sugar and fold into the beaten egg whites. Transfer the almond mixture to a piping bag fitted with a large nozzle. Pipe hazelnut-sized heaps onto a greased or parchment-lined baking sheet. Bake in the center of the preheated oven for about 15 minutes until golden brown. Place on a wire rack and let cool.
