Ingredients for 1 servings:
- 300 g flour
- 110 g sugar
- 130 g butter
- 1 egg(s)
- 1 egg yolk
- 1 tsp baking powder
- 1 lemon(s), (peel)
- 1 jar jam (plum)
- 25 biscuits (Amaretti)
- some Amaretto or Alchermes (Italian herbal liqueur)
- some powdered sugar
Instructions
Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 25 minutes
Combine all the dough ingredients in a bowl and knead into a smooth dough. Wrap in cling film and let rest in the refrigerator for 30 minutes. Line a springform pan with baking paper and spread 2/3 of the dough into it, pulling up the edges. Prick the dough several times with a fork. Spread the plum jam over the dough. Toss the amaretti in the liqueur and place on top of the jam. Roll out the remaining dough into a round disc and place over the amaretti. Press the edges down. Bake in an oven preheated to 180°C for approx. 35 minutes. Dust with powdered sugar before serving.
