Ingredients for 1 servings:
- 240 g flour
- 140 g butter
- 70 g powdered sugar
- 1 m.-sized egg(s)
- 1 pinch of salt
- 250 g ricotta
- 500 g low-fat quark (low-fat curd cheese)
- 150 g sugar, fine
- 1 tbsp vanilla sugar
- 1 tbsp pudding powder (semolina or vanilla semolina)
- 5 large eggs
- 7 tbsp Amaretto
- 60 g biscuits (amarettini)
- 50 g almond flakes
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Sift the flour onto a work surface, sprinkle with salt and sugar, and make a well in the center. Cut the cold butter into small pieces and arrange around the well. Crack the egg and add it to the center. Now chop all the ingredients thoroughly with a knife to form small lumps of dough. Quickly knead with your hands until you have a dough, wrap in cling film, and refrigerate for about 30 minutes. Roll out about 2/3 of the dough between cling film and cover the bottom of a 26cm springform pan, flattening it evenly with your hand or a small rolling pin if necessary. Shape the remaining dough into an even log, then wrap it around the edge and press down to a height of about 4cm; the edge should be thin (!). Chill the springform pan and the dough. Squeeze out some of the low-fat quark into a clean linen cloth. Separate three of the eggs. Beat two whole eggs and the three egg yolks with the sugar and vanilla sugar until frothy. Beat the three egg whites until stiff peaks form. Stir the ricotta, low-fat quark, custard powder, and amaretto until smooth. Stir in the egg custard and beaten egg whites. Pour the mixture into the prepared springform pan and smooth the surface. Crumble some of the amaretti biscuits (using a rolling pin in a freezer bag) and scatter them over the quark mixture along with the flaked almonds. Place the remaining whole amaretti biscuits on top. Bake in a preheated oven at 170°C (conventional oven temperature depends on your oven) for about 60 minutes. Keep the cooled cake refrigerated until ready to eat – it tastes especially good on the second day! A wonderfully creamy cheesecake with the unique flavor of amaretto, almonds, and amaretti biscuits.
