Amaretto Mascarpone Cream

Ingredients for 4 servings:

  • 3 egg yolks
  • 1 tbsp sugar
  • 400 g mascarpone
  • 2 cl Amaretto
  • 1 sheet of gelatin
  • 100 g biscuits (Amaretti)
  • 12 cherries (amarena cherries with juice from the jar)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Whisk the egg yolks and sugar until thick and creamy. Fold in the mascarpone and add the liqueur. Soften the gelatin, dissolve it, and fold it into the cream. Crumble the amaretti slightly, alternate them with the cream in a large glass bowl or four glasses, and chill briefly. Serve the amaretto cream garnished with amaretto cherries and a little juice.
