American Blueberry Cheesecake

Ingredients for 1 servings:

  • 300 g biscuit(s) (wholemeal butter biscuit)
  • 150 g butter, liquid
  • 350 g double cream cheese
  • 500 g quark
  • 80 g sugar
  • 2 tsp, heaped vanilla sugar
  • 3 eggs
  • 100 ml cream
  • 200 g chocolate, white
  • 100 g blueberries, fresh or frozen

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 50 minutes

Preheat oven to 175 degrees Celsius (350 degrees Fahrenheit). Crush the butter cookies and mix with the melted butter. Spread the cookie mixture onto the bottom of a non-stick springform pan and press down firmly. Bake the cake base in the center of the preheated oven for 10 minutes. Let cool. Mix together the cream cheese and quark. Stir in the sugar, vanilla sugar, and cornstarch. Gradually add the eggs and stir in the cream. Break the chocolate into pieces and melt it over a pan of hot water. Then stir it into the cheese mixture. Spread the mixture onto the cake base and sprinkle with the blueberries. Bake in the center of the preheated oven for about 40 minutes. If the cake starts to brown too much, cover with aluminum foil. Let the cheesecake stand in the turned-off oven for about another 30 minutes.
