American cake with lemon icing

Ingredients for 6 servings:

  • 125 g butter
  • 160 g sugar
  • 1 pinch of salt
  • 3 eggs
  • 1 lemon(s) – peel
  • 500 g flour
  • 1 packet of baking powder
  • ¼ liter of milk
  • 250 g powdered sugar
  • 1 tbsp lemon juice
  • 2 tbsp water

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Cream butter, sugar, and salt until fluffy. Add eggs and grated lemon zest, one at a time. Mix flour with baking powder, stirring in alternately with milk. The dough should be fairly firm. Drop tablespoonfuls of dough onto a greased baking sheet and bake in a preheated oven at 200°C (top/bottom heat) for 20 minutes until golden brown. Remove the American cookies from the baking sheet and spread hot icing on the smooth underside. This is a quick and easy treat, and also perfect for surprise visitors.
