Ingredients for 1 servings:

  • 270 g flour
  • 340 g sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 300 g carrot(s), grated
  • 1 cup of oil (e.g. sunflower oil)
  • 4 eggs
  • Cake icing of your choice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Super quick and super moist! Gugelhupf

Combine all ingredients in a large mixing bowl and mix well, then pour into the Bundt pan and bake at approximately 180°C (350°F) for about 45 minutes (depending on your oven) using conventional heat (check with a skewer). When nothing sticks to the skewer, it’s done; this happens quite quickly, especially in the last 5 minutes! Remove immediately. Don’t be surprised; the batter is thin, but it has to be that way to ensure the cake is nice and moist. Depending on your taste, you can enjoy it as is, or add a chocolate or sugar glaze. It will keep fresh for a long time!
