Ingredients for 1 servings:

  • 200 g rusks
  • 40 g sugar
  • 80 g butter
  • 125 g butter
  • 75 g sugar
  • Salt
  • 60 g flour
  • 325 g cream cheese
  • 1 cup sour cream
  • 4 eggs, separated
  • 1 packet of vanilla sugar
  • possibly milk

Working time approx. 30 minutes; Total time approx. 30 minutes

American-style quark cake

Finely crush the rusks (this works best in a transparent zip-top bag. Then take a ladle and hit them or use a rolling pin). Mix with 40g of sugar and a pinch of salt. Melt 80g of butter and knead into a dough with the rusks. If the dough crumbles too much, add a splash of milk. Grease a springform pan and press the rusk dough into the base. For the filling, melt 125g of butter, mix well with 75g of sugar and a pinch of salt. Stir in the egg yolks and vanilla sugar. Stir until the sugar has mostly dissolved and the mixture is light in color. Sprinkle with flour and fold in. Also fold in the quark and sour cream. Beat the egg whites until stiff peaks form and fold in. Spread everything on the rusk base. Bake for 1 hour at 180°C on the second-lowest rack; check the baking time after 45 minutes! The top of the cake should be golden brown.
