Ingredients for 6 servings:

  • 1 kg red cabbage
  • 3 m.-large apples, sour
  • 2 m.-sized onion(s)
  • 50 g lard
  • 1 bay leaf
  • 3 cloves
  • 3 juniper berries
  • Salt and pepper, black from the mill
  • Sugar
  • 2 tbsp vinegar
  • 3 tbsp jam (currant jelly)
  • 125 ml red wine

Remove the outer coarse leaves of the red cabbage, then quarter the cabbage and remove the stalk. Wash the cabbage and chop or grate it very finely. Peel, quarter, core, and dice the apples. Peel and dice the onions. Melt the lard, fry the diced onions in it, add the cabbage and apples, and fry them as well. Add the other ingredients. Simmer the red cabbage for about 1.5 hours until tender, then season with salt and sugar. Remove the juniper berries, bay leaves, and cloves.
