- 3 eggs
- 100 ml milk
- 200 ml natural yogurt
- 150 g flour
- 1 packet of baking powder
- 1 pinch of salt
- 2 tbsp sugar
- olive oil
- maple syrup

Whisk the eggs into a nice, light foam. Mix the milk and natural yogurt; I use about 200 ml yogurt, the rest milk. You can use more or less yogurt, depending on what you have on hand. This makes the pancakes really thick and moist! Gradually add the flour, baking powder, milk-yogurt mix, salt, and sugar to the eggs and keep whisking. Add a little more milk if the batter is too thick, but it should already be quite thick. Heat the pan over medium heat, add about a teaspoon of oil at a time, and fry all the batter into pancakes, one at a time. Important! Use very little oil and cook slowly, i.e. on a medium heat; don’t overcook them. They taste great with maple syrup, sugar beet syrup, or with fruit and quark.
