Ingredients for 1 servings:

  • 500 g cucumber(s), peeled, seeds removed, chopped
  • 150 g onion(s), chopped
  • 70 g bell pepper(s), green, cleaned and chopped
  • 70 g red bell pepper(s), cleaned and chopped
  • 3 tsp salt
  • 350 g white sugar
  • 250 ml apple cider vinegar
  • ½ tsp celery, seeds
  • ½ tsp mustard seeds
  • ½ tsp coriander, if desired

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 35 minutes

Sweet Pickle Relish for Hamburger Sauce

Place the chopped vegetables in a bowl. Sprinkle with salt. Cover with cold water and let stand for 2 hours. Drain the water and squeeze the vegetables thoroughly, leaving as little liquid as possible. In a large pot, bring the sugar, vinegar, and spices to a boil on the stovetop. Add the vegetables and bring to a boil. Reduce the heat and let the relish simmer gently for 10 minutes. Remove the pot from the heat and ladle the relish into twist-off jars using a slotted spoon (the relish does need some liquid, but not too much). This yields approximately 1 liter.
