Amuse-bouche goose liver

Ingredients for 3 servings:

  • 3 small slices of baguette
  • 1 tbsp goose fat
  • 75 g goose liver
  • 1 pinch of sea salt
  • 1 egg(s)
  • 25 g flour
  • 25 g breadcrumbs

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 14 minutes

Whisk the egg in one bowl, add the flour to another bowl, and then the breadcrumbs to a third bowl. Coat the goose liver from the Christmas goose first in flour, then in the egg, and finally in the breadcrumbs. Heat a little goose fat in a pan and fry the goose liver for about 2 minutes on each side. Toast the baguette slices, brush with a little goose fat, season with salt, and place a third of the fried liver on each slice.
