Andalusian lamb skewers

Ingredients for 4 servings:

  • 800 g lamb fillet(s)
  • 4 cloves garlic
  • 1 tsp salt
  • 1 tsp rosemary, fresh
  • 1 pinch of cumin
  • 1 pinch of cayenne pepper
  • 1 pinch of paprika powder, hot
  • 5 tbsp olive oil
  • ½ lemon(s), the juice

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Cut the meat into 8 long, thin strips. Peel and chop the garlic, and crush it into a paste with 1 teaspoon of salt. Mix the garlic paste, rosemary, cumin, cayenne pepper, paprika, oil, and lemon juice to make a marinade. Marinate the meat strips in the marinade, covered, and refrigerate for about 2 hours. Thread the strips in a zigzag pattern onto metal skewers. Grill or fry the skewers for 3 minutes on each side. Serve with a small tortilla, a salad, and a cold beer.
