Lemon-ginger cookies

Ingredients for 1 servings:

  • 200 g flour
  • ½ tsp baking powder
  • 1 pinch of salt
  • 1 piece(s) ginger root, fresh
  • 1 lemon(s), untreated, juice and grated zest
  • 90 g sugar
  • 120 g butter
  • powdered sugar

Grate the ginger; this should make 1 teaspoon. Grate the lemon zest and juice the lemon. Mix the flour with the baking powder and salt. Add the sugar, ginger, lemon zest, and 1 tablespoon of lemon juice. Knead with enough butter to form a smooth dough that no longer crumbles (about 120g butter, more if needed). Form into cherry-sized balls, flatten with your hand, and bake in a preheated oven at 180°C (top/bottom heat) for about 12 minutes. Make a glaze from the powdered sugar and lemon juice and spread it over the cookies after they have cooled.
