Ingredients for 1 servings:
- 500 g wheat flour
- 1 cube of yeast, fresh
- 50 g sugar
- 250 ml milk or water or mixed
- ½ tsp salt
- 80 ml oil
- ½ tsp, leveled baking soda
Instructions
Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes
Put the flour and baking soda into a large bowl and make a well in the center. Crumble the yeast into the well, sprinkle with 1 teaspoon of sugar and a little flour, and pour over 100 ml of milk or water. Wait until the yeast has dissolved and begins to bubble. Mix with the remaining sugar, the remaining liquid, and some of the flour until a thin paste forms. Wait again until bubbles form. Now stir in the oil and salt and knead everything into a smooth dough. Cover and set in a warm place until it has tripled in size. The dough can now be processed as desired. For a sweet dough, you can use more sugar; for a neutral dough, less or no sugar at all. Prepare pizza dough with more salt and olive oil. The rising time depends on the temperature. Use ingredients that are at most lukewarm; I prefer room temperature. The baking soda increases the leavening power.
