Potato gratin without cream

Peel the potatoes and slice them thinly using a mandoline. Place them in a shallow, buttered casserole dish, tiled like a roof tile. Season with salt and pepper. Add a few knobs of butter to the top and bake in a preheated oven at 225°C (top/bottom heat) for about 50 minutes. This gratin is perfect with steaks and anything pan-fried. The potato slices are nice and soft where they overlap, with crispy edges.
