Anna's Strawberry Vanilla Jam

Ingredients for 1 servings:

  • 1 kg strawberries, cleaned
  • 1 lemon(s), untreated
  • 2 vanilla pods
  • 500 g gelling sugar, 2:1

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Puree the strawberries in a blender, grate the lemon zest, and squeeze the juice. Scrape out the vanilla pods, reserving the pods. Combine the strawberries, vanilla seeds, scraped pods, lemon zest and juice with the sugar in a sufficiently large saucepan. Bring the mixture to a boil, then simmer for about 5 minutes, then remove the pods. Transfer everything to clean, preheated jars. Seal immediately and turn upside down. This yields approximately 5 to 6 jars of jam.
