Ingredients for 1 servings:

  • 100 g butter
  • 200 g cheese (Frankfurter Handkäse/Harzer Rolle)
  • 150 ml cream
  • 100 g processed cheese
  • 200 g quark, 40% fat
  • 8 cl white wine
  • 1 tsp. baking soda
  • Caraway seeds
  • chili

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Heat the butter, hand cheese, cream, processed cheese, white wine, chili, and caraway seeds in a double boiler. Allow to become as thin as possible. Add chili and caraway seeds to taste; you can also omit the spices. Then remove from the boiler, add the quark and baking soda. Stir everything until smooth and pour into a container (clay container, Tupperware). The cooked cheese also works wonderfully well in portions when frozen.
