Ingredients for 1 servings:

  • 450 g flour
  • 2 tbsp sugar
  • 200 ml water
  • 20 g yeast
  • 40 g butter
  • 1 egg(s), separated
  • 1 pinch of salt
  • 150 g seasoning paste (sweet red bean paste, Anko, alternatively Nutella)

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

for 10 pieces, Japanese rolls with sweet filling

Place flour, sugar, salt, egg whites, and butter in a bowl. Dissolve the yeast in lukewarm water, gradually add it to the ingredients, and knead everything into a smooth yeast dough. Cover the dough and let it rise in a warm place for 30 minutes. Then divide the dough into 10 equal pieces, flatten each one slightly, and place a spoonful of Anko or Nutella in the center. Seal the edges over the filling to create 10 dough balls. Place the balls, leaving enough space between them, on a baking sheet lined with baking paper, brush with a little water, cover with a towel, and let it rise in a warm place for another 20 minutes. Whisk the egg yolk and brush the Anpan with it. Bake for 15 minutes at 180°C (fan oven). Let cool.
